Béchamel sauce is one of the classic French sauces and is a classic white sauce that's given additional flavour by infusing the milk with carrot, onion, celery, black peppercorns, mace and bay leaf for 30 minutes before cooking. Béchamel also forms the basis for numerous other sauces. The sauce itself was named after its inventor, Louis XIV's steward Louis de Béchamel.
