Welcome to Celtnet's Gluten-free Recipes Page — this listing is for all the gluten-free recipes added to this site. Wheat contains the protein gluten, and it is this protein that allows breads and cakes not only to hold together, but also holds air in the mixture, allowing such confections to rise. A number of people are intolerant to gluten and this may trigger an autoimmune disase, as in coeliac disease (for information about Coeliac Disease, please see this site's Celtnet Medicine Coeliac Disease information page. As a result, for such people alternates ae needed for wheat and barley in baking. On this site, I have a recipe for a gluten-free wheat substitute and there are also a number of recipes and modifications of traditional recipes that use this mixture to make gluten-free cakes, pies and other dishes. These dishes are suitable for anyone who is gluten intolerant or who has coeliac disease.

The number of gluten-free recipes has now grown sufficiently large so that they warrant their own collection on this website.
