Abish Recipe

Origin: Ethiopia      Period: Traditional

Ingredients

120ml vegetable oil
1 large onion, diced
1 tbsp ginger, freshly-grated
1 tbsp garlic, finely chopped
2 tomatoes, diced
450g lean minced beef
salt, to taste
3 eggs, beaten
1 tbsp turmeric
1 tbsp butter
1 tbsp chopped parsley
240g goat's cheese, grated
parsley to garnish

Abish Preparation:


Method:

First combine the butter and the parsley and mix to a smooth paste.

Heat the oil in a pan and fry the onion until golden brown then stir-in the ginger, garlic, tomatoes, minced meat and salt. Reduce the heat and cook slowly for about 20 minutes, stirring regularly. Add the eggs to the mixture in the pan, stir to combine and cook for 10 minutes.

Remove from the heat then add the turmeric and herbed butter and top with parsley and cheese. Serve immediately, accompanied by rice and/or fresh bread. You can also use this as a vegetable stuffing.
