Coriander Chicken Recipe

Origin: Algeria      Period: Traditional

Ingredients:

1 small chicken, cut into serving pieces
5 tbsp olive oil
4 large garlic cloves, crushed
1 tsp turmeric or saffron
salt and pepper to taste
sprig of fresh coriander leaves, finely chopped
250g pitted black olives (eg kalamata)
1 lemon, sliced

Coriander Chicken Preparation:


Method:

Add the oil to a large pan and brown the chicken on all sides. Add the garlic, spices and coriander and cook for about 10 minutes. Stir-in just enough water to cover and simmer over low heat until the chicken is tender (add more water as necessary). Add the olives and lemon, reduce the heat and cook for 10 minutes, or until the sauce has reduced and thickened.

Serve on a bed of rice or couscous.
