Algerian Roast Pepper Sauce Recipe

Origin: Algeria      Period: traditional

Ingredients:

2 red bell peppers
4 tomatoes
1 tbsp olive oil
4 garlic cloves, chopped
1 hot red chilli pepper, finely chopped
pinch of cumin
salt and black pepper, to taste

Algerian Roast Pepper Sauce Preparation:


Method:

Grill the peppers and tomatoes until they begin to char (about 8 minutes) then allow to cool a little and peel. De-seed and chop the bell peppers then chop the tomatoes.

Now add the oil to a pan and use to fry the garlic and chilli until tender (about 4 minutes). Combine all the ingredients in a blender and process until smooth. Season to taste and serve in a bowl as a starter with bread.
