Algerian Spiced Potato Cakes Recipe

Origin: Algeria      Period: Traditional

Ingredients:

1kg mashed potatoes
1 tbsp paprika
2 tsp ground cumin
generous pinch of cayenne pepper
1 bunch coriander, chopped
3 eggs
salt and black pepper to taste
oil for frying

Algerian Spiced Potato Cakes Preparation:


Method:

Mix the potato with the spices, coriander, egg and seasoning in a large bowl. With floured hands, form the mixture into round flat cakes. Cover with clingfilm and chill in the fridge for 30 minutes.

Heat a shallow layer of oil in a frying pan and adding the cakes in batches fry until crisp and brown on both sides. Transfer to paper towels and drain.

Serve hot.
