Alitcha Birsen Recipe

Origin: Eritrea      Period: Traditional

Ingredients:

5 tbsp vegetable oil
6 garlic cloves, crushed
250g tomatoes, blanched and peeled
200g lentils
1 tsp salt
1 tsp black pepper
1 tsp ginger
2 fresh red chillies, finely chopped
1l boiling water

Alitcha Birsen Preparation:


Method:

Heat the oil in a pan and fry the garlic until golden. Add the sliced tomatoes and simmer for 5 minutes before adding the washed lentils. Simmer for a few minutes then add the ginger, chilli and boiling water. Season with salt and pepper, cover the pan and simmer for an hour.

Serve with Injeera.
