Chow Recipe

Origin: Ethiopia      Period: Traditional

Ingredients

1 garlic clove, sliced
1 tsp freshly-grated ginger
1/4 tsp ground caraway seeds
1/2 tsp ground cardamom
1/4 tsp ground mustard seeds
1/4 tsp ground sumac
1/4 tsp ground coriander seeds
1/2 tsp ground turmeric
80ml water
1/4 tsp fresh hot chilli, pounded to a paste
1/4 tsp paprika

Chow Preparation:


Method:

Place all the ingredients together in a small food processor and process to a smoth paste (this should be about the same consistency as toothpaste). Spoon into a jar with an air-tight lid and keep in the refrigerator. Use as needed.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
