Fried Sweet Potatoes Recipe

Origin: sub-Saharan Africa      Period: Traditional

Along with fried plantains, fried sweet potatoes are a common snack in much of sub-Saharan Africa. Typically they are deep-fried then sprinkled with salt and hot sauce before consuming. For these you should use African white sweet potatoes (yams) though the red kind will also work.

Ingredients

3 medium sweet potatoes
groundnut oil for frying

Fried Sweet Potatoes Preparation:


Method:

Scrub the sweet potatoes and cut into 5mm rounds. Heat the oil to about 180°C and add the sweet potatoes a few at a time. Fry them until they are crisp on the outside and soft in a middle (try a few to check the timing!). Drain on kitchen paper, arrange on a plate and sprinkle with salt and hot sauce before serving.

You can also make a sweet version of this dish by sprinkling the sweet potato rounds with cinnamon before serving. Drizzle with honey and then serve.
