Origin: Zambia      Period: Traditional

Ingredients:

120ml milk
500g sweet potatoes
100g wheat flour
80g sugar
2 sticks cinnamon, ground
oil for frying

(Sweet Potato Cakes) Preparation:


Method:

Peel the sweet potatoes, cut into cubes and boil in the milk until soft and tender. Mash the sweet potatoes into the milk at this point then add the cinnamon and flour. Knead into a dough and shape into balls. Deep fry in oil until golden brown then drain on kitchen paper and serve.
