Grilled Tilapia Recipe

Origin: African      Period: Traditional

Tilapia, often called Ngege is a family of fish that are native to the lakes and rivers of Africa. It is easy to grow in man-made ponds and is omnivorous. As a result tilapia has become an economically important fish world-wide. Tilapia can be substituted for just about any white fish in an African recipe.

Ingredients:

4 whole tilapia, about 600g each
1 tbsp vinegar
1 green bell pepper, finely chopped
1 onion, finely chopped
juice of 1 lemon
red chilli flakes, to taste
salt, to taste
250ml vegetable oil

Grilled Tilapia Preparation:


Method:

Combine all the ingredients (except the fish) in a large glass bowl and whisk until well mixed. Make three deep slits on each side of the fish then rub the oil and spice marinade onto and into the fish. Place the fish in the bowl and allow to marinade for up to an hour.

Cook the fish over a barbecue or cook under a grill, turning once or twice. Serve accompanied by African hot sauce
