Isidudu Recipe

Origin: Zimbabwe      Period: Traditional

Ingredients:

700g cooked pumpkin
1l water
550g corn (maize) meal
60g sugar
1 tsp salt

Isidudu Preparation:


Method:

Bring the water to a boil on a pan then add the sugar, salt and pumkin, stirring to mix. Once the mixture is back to a boil add the maize meal slowly, stirring all the while. Reduce to a simmer and cook for 30 minutes, stirring occasonally. Use the isidudu as a base for stews and sauces.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
