Kenyan Beef Stew Recipe

Origin: Kenya      Period: Traditional

Ingredients

450g beef, cut into cubes
2 carrots, peeled and cut in diagonal rounds
2 green bell peppers, diced
4 tomatoes, chopped
4 onions, sliced
2 tsp Malawi Curry Powder
2 tbsp freshly-chopped coriander leaves
1 tsp ground black pepper
vegetable oil
salt, to taste

Kenyan Beef Stew Preparation:


Method:

Fry the onions in oil until they begin to brown. Add the tomatoes and green peppers and stir-fry for a minute before adding the carrots, black pepper and coriander.

Wash the meat and season with salt. When the carrots have begun to soften add the meat and cook for about 25 minutes. When the meat is almost done add the curry powder and season to taste.

Serve on a bed of pilau rice.
