Lentille bil Khodar
(Lentil and Vegetable Soup) Recipe

Origin: Algeria      Period: Traditional

Ingredients:

450g beef, cut into 2cm dice
1 tbsp olive oil
1 onion, finely chopped
6 garlic cloves, finely chopped
1/2 tsp salt
1/2 tsp freshly-ground black pepper
1/2 tsp ground cumin
1/2 tsp ground caraway seeds
1/2 tsp cayenne pepper
1/4 tsp turmeric
1 large. ripe, tomato, finely chopped
2 carrots, finely diced
1 large potato, finely diced
4 celery sticks, chopped
4 sprigs parsley, chopped
450g lentils
2 tbsp tomato purée

Lentille bil Khodar
(Lentil and Vegetable Soup) Preparation:


Method:

Add the oil to a pan and use to fry the beef and onion for about 5 minutes, stirring frequently. Add the garlic and fry for 2 more minutes before stirring-in the salt and spices. Cook for 5 more minutes then add the tomato, carrots, potato, celery and parsley. Pour 750ml water over the top then bring to a boil, reduce to a simmer, cover and cook for about 20 minutes, or until the vegetables are just tender.

Add the lentils and tomato purée to the pot, return to a simmer and cook gently for 60 minutes, until the sauce has thickened and the lentils are tender. Serve either on a bed of lentils or accompanied by khoubz araby (Arabic-style flatbread).
