Matata
(Clam and Peanut Stew) Recipe

Origin: Mozambique      Period: Traditional

Ingredients:

200g onions, finely chopped
60ml olive oil
700g canned, chopped clams (or fresh clams if available)
200g peanuts, finely chopped
2 tomatoes, cut into small pieces
1 tbsp salt
1/2 tsp black pepper
1 tsp red chilli flakes
700g spinach, finely chopped

(Clam and Peanut Stew) Preparation:


Method:

Fry the onions in the olive oil until just soft then add the clams, peanuts, tomatoes, salt, black pepper and chilli flakes. Simmer gently for 30 minutes then add the spinach. Cover the pan tightly and continue cooking until the spinach has wilted. Adjust the seasoning and serve on a bed of boiled rice.
