Mishkaki Recipe

Origin: East Africa      Period: Traditional

Mishkaki is the Swahili word for skewer-grilled marinated meat; shish kebabs in other words.

Ingredients:

1 tbsp freshly-grated ginger
2 cloves garlic, minced
1 small, ripe tomato, blanched, peeled, and crushed
1/2 tsp tamarind paste
2 tbsp oil
2 tbsp water
salt and black pepper, to taste
750g beef cut into large cubes

Mishkaki Preparation:


Method:

Combine all the marinade ingredients in a metal bowl then stir vigourously to mix all the ingredients. Add the meat to the marinade and ensure that all the cubes are covered. Allow the meat to marinate for at least 90 minutes (or over night in the fridge).

Place the marinated meat on skewers then cook on a barbecue until the meat is done. These are traditionally served with Chapatis, Rice or bread and can be used as a starter or as a main course.
