Mombasa Pumpkin Dessert Recipe

Origin: Kenya      Period: Traditional

Ingredients:

This is a very interesting and tasty desert that proves pumpkins really are a fruit and not a vegetable!

1.6kg sugar pumpkin, de-seeded and cut into large chunks
400g granulated sugar
240ml coconut milk
1/2 tsp ground green cardamom

Mombasa Pumpkin Dessert Preparation:


Method:

Place the pumpkin pieces in a steamer and cook for about 8 minutes, or until just tender. Take off the heat, allow to cool and scoop or cut the flesh from the skin.

Add the pumpkin flesh to a saucepan and combine with the sugar. Over medium heat cook, stirring all the while, until the sugar completely dissolves into the pumpkin. Add the coconut milk and cardamom at this point. Continue cooking and stirring until the mixture thickens to a thick custard-like consistency. This is easiest if you press the pumpkin against the side of the pot every now and then to mash it.

Spoon into ramekins or individual bowls, decorate with a swirl of cream and serve. This dish can be served either hot or cold, but is probably best when chilled.
