Mtori Recipe

Origin: East Africa      Period: Traditional

This is another East African dish employing plantain as a central ingredient.

Ingredients:

1 garlic clove, minced
1 chilli pepper, de-seeded and finely chopped
1kg stewing meat cut into 3cm cubes (or beef short ribs)
4 almost-ripe plantains, peeled and chopped
4 potatoes, peeled and quartered
3 tomatoes, blanched, peeled and chopped
2 onions, chopped
1l beef stock
cooking oil
salt and black pepper to taste
250ml coconut milk

Mtori Preparation:


Method:

Mix the garlic and chilli paste into a rub (or beat together in a pestle and mortar) then rub into the meat and allow to marinate for at least an hour.

Meanwhile heat 3 tbsp oil in a large pan or a metal casserole pot. Add the meat and cook for about 10 minutes until evenly browned but not completely done. Add the stock, cover and reduce the heat so a simmer. Cook for half an hour, or until the meat is tender.

Once the meat is done add the plantains, potatoes, onions, tomatoes, and enough water to partly cover the ingredients. Continue simmer until the plantains are tender, adding more water as necessary. When the plantains are done mash everything together (if you are using beef ribs remove the meat and strip from the bone before returning to the pot) then season to taste and add the coconut milk. Heat through and serve hot.
