Preserved Limes Recipe

Origin: North Africa      Period: Traditional

Ingredients:

4 whole lemons
180g coarse sea salt
lime juice

Preserved Limes Preparation:


Method:

Clean four large limes and dry them thoroughly. Remove the ends then cut into eight sections. Place in a bowl and toss with aobut 180g of coarse sea salt. Pack these lime slices inta large airtight jar so that they fit snugly. Squeeze the juice from sufficient fresh limes so that the lime juice completely covers the limes in the jar.

Secure the lid tightly and place in the refrigerator. Each day for the next seven days give the jar a shake. After a week, the limes will have softened and intensified in flavour, making them ready for use.

Once you open the jar to remove the couple of sections add a thin layer of olive oil to keep the air out and keep stored in the fridge.
