Safari Steak Recipe

Origin: Kenya      Period: Traditional

Ingredients:

6 x 250g steaks (venison would be best but beef is OK)
60g butter or 2 tbsp oil
250ml dry red wine
250ml dessert (sweet) wine
2 garlic cloves, finely minced
4 tbsp tomato paste mixed with 4 tbsp water
600g mashed potatoes (cooked and hot)
400g mashed yams or sweet potatoes (cooked and hot)
bunch of parsley, chopped

Safari Steak Preparation:


Method:

Melt the butter in a frying pan and season each steak with ground black pepper. Fry the steaks for about 3 minutes per side then place in an oven to keep warm. Lower the heat in the pan and add the wine and garlic. Cook for 2 minutes, scraping the base of the pan to loosen any meat juices. Then add the tomato paste mixture. Cook until the sauce is quite thick.

Mix the mashed yams and potatoes together and form into a layer on the base of a serving dish. Place the steaks on top and spoon the sauce over the dish. Garnish with chopped parsley and serve.
