Sopa de Feijao Verde
(String Bean Soup) Recipe

Origin: Mozambique      Period: Traditional

Ingredients:

1.5l water
2 tsp salt
1/2 tsp black pepper
3 large potatoes, cut into chunks
2 large onions, cut into chunks
450g fresh string beans, cut diagonally into thin slices

Sopa de Feijao Verde
(String Bean Soup) Preparation:


Method:

Bring 1.5l water to the boil then add the salt, pepper, potatoes, tomatoes and onions and simmer for 30 minutes. Allow to cool and puree in a food processor then return to the pot add the string beans and simmer for 10 minutes, until the beans are tender. Correct the seasoning and serve in bowls.
