Spicy Okra and Turnip Greens Recipe

Origin: West Africa      Period: Traditional

Ingredients

450g turnip or collard greens
12 okra
1 medium onion, chopped
30g pine nuts, toasted
2 tbsp vegetable oil
3 red scotch bonnet chillies, seeded and finely chopped
60ml water
1/4 tsp salt

Spicy Okra and Turnip Greens Preparation:


Method:

Remove the stems from the greens and cut into 0.5cm slices. Remove the ends from the okra and cut crosswise into halves. In a large metal casserole, cook the onions and pine nuts in oil over medium heat for about 5 minutes. At the end of this time add the greens and okra along with all the remaining ingredients. Cover and simmer until the greens are tender (about 20 minutes).
