Squash and Yam Futari Recipe

Origin: Tanzania      Period: Traditional

Ingredients:

1 small onion, chopped and cut into 3cm pieces
2 tbsp oil
250ml coconut milk
450g hubbard or butternut squash
1/2 tsp salt
1/2 tsp ground cinnamon
2 medium-sized yams, cubed
1/4 tsp ground cloves

Squash and Yam Futari Preparation:


Method:

In a large frying pan over medium heat add the oil and onion. Cook until tender then add the remaining ingredients. Heat until boiling then reduce the heat, cover and simmer for 10 minutes.

Remove the lid, and stirring occasionally cook until the vegetables are tender (about an additional 5 minutes). Serve immediately.
