Tanzanian Coconut Bean Soup Recipe

Origin: Tanzania      Period: Traditional

Ingredients:

100g onions, finely chopped
100g green bell pepper, finely chopped
1 tsp curry powder
1 tsp salt
1/4 tsp black pepper
3 tbsp butter
200g fresh tomato cut into 1cm pieces
600g kidney beans (tinned)
500ml coconut milk
200g water
100g cooked rice

Tanzanian Coconut Bean Soup Preparation:


Method:

Fry the onions, green pepper, curry powder, salt and pepper in the butter until softened then add the tomatoes. Allow to simmer for 2 minutes before adding the kidney beans, coconut milk and water. Simmer for 10 minutes then add the cooked rice.

Serve in soup bowls and garnish with shredded coconut.
