Varenga
(Roast, Shredded, Beef) Recipe

Origin: Madagascar      Period: Traditional

Ingredients:

1.8l chuck steak, cut into 3cm pieces
1l water
2 tbsp salt
2 garlic cloves, finely minced
200g onions, sliced

Varenga
(Roast, Shredded, Beef) Preparation:


Method:

Combine all the ingredients in a large saucepan, cover and bring to a boil, reduce to a simmer and cook for 2 hours. Remove the meat from the pan, shred by cutting into thin strips then transfer the meat and stock to a greased 22 x 30cm oven-proof baking pan. Place in the centre of an oven pre-heated to 200°C for 30 minutes, until the dish is nicely browned across the top.

Serve on a bed of rice, garnished with sprigs of parsley.
