Though not truly 'authentic' the rub given below is based on a fish seasoning that my wife uses and it does incorporate traditional West African spices (as well as European-influenced herbs found in West Africa). It makes a fiery and flavoursome rub that goes well with meaty fish. Ingredients
6 Sénégal pepper pods
West African Fish Rub Preparation:Method:Add the dry ingredients to a coffee grinder and grind to a fine, smooth, powder. Then add the other ingredients and grind to a smooth paste (you can store this in an air-tight container in the fridge for a few days if needed). Use as a rubbing spice mixture for strongly-flavoured fish such as tuna, monkfish, sardines, mackerel before cooking on a barbecue. |
