Welcome to Celtnet's Vegetable Recipes Page — Vegetables are and important part of the human diet. They provide carbohydrates, vitamins, minerals and cruscially, dietary fibre. They also add flavoure and bulk-up a meal. As such, they have been harvested from the wild and added to soups and stews from the very earliest of times. Scientifically, vegetables are the tuberous or vegetative parts of plants (stems, roots, tubers, rhizomes, flower or leaf buds etc). In clulinary terms, however, fruit that are cooked with vegetables (such as marrows, courgettes, tomatoes, cucumbers, squashes etc), are also typically classed as vegetables whilst a few vegetables (such as rhubarb) are classed as fruit. The importance of vegetables in the diet mean that they are used in a while range of ways by every culture on earth. As such, the breadth of recipes given here is very large. Please note, that thes are all recipes where vegetables are a main (but not necessarily the only) ingredient used in a dish.
